Authentic “Jamrock” Black Cake or also known as Christmas cake or Rum cake or just black cake has been a family staple every holiday season for as far back as we have known. This cake, dark in color, but rich in fruit flavor is one of the most unique, original, and tasty desserts you will ever have. Filled up with Jamaican white rum and wine soaked fruit, alcohol is the key to a great black cake.
The icing is royal icing, made with meringue powder.
